* Any Apple software (OS X, pro apps) - I know they're hard to negotiate with, but if anyone in the nonprofit sector can, it's TechSoup.
* ARC GIS
* SPSS
* Ditto on the FULL Windows and not just the upgrade DVDs
* More accessible Adobe terms of use
* More accessible Cisco terms of use
* Ditto on Extensis Portfolio
I second ARCGIS and especially SPPS.
Also, a serious network backup program, with support for Exchange, SQL, etc.

VMWare Infrastructure - The flexibility and assurance of some of the High Availability stuff could really reduce some technology headaches and insecurities for many non-for-profits. This would just be awesome to make it more available to us small guys.
I definitely share the sentiments about expanding the Cisco program to other organizations. Or having another major network hardware company participating more openly.

Apple OS, Filemaker Pro, Quark, Omni software (Omni Plan is great for project management on a Mac), Quickbooks for NON PROFITS.
