iBackup DOES encrypt the data during transmission and storage for their Professional service. The only difference is that the Professional does NOT allow you to share the files from their site as if it were a shared storage drive. The Enhanced version does but does not encrypt them on their side so that they CAN be shared to other users. They actually have 3 levels of service depending on what exactly you need the software and storage to do. For the price of 15 GB ($35/mo) compared to Iron Mountains price ($200/mo) it is working out extremely well so far.

Thanks for the clarification on iBackup's offerings. Our system isn't specifically designed as a file-sharing service, but it can technically be used as such - by giving your userID and PW to the other person. Technically you can backup as many machines as you can fit in your space (we're currently offering 5, 50 and 100GB accounts) by setting up different filesets. I 'share' between the office and home that way, since I can 'restore' from the client or the web interface.
We're hoping to compete with iBackup, so I'm trying to find out what advantages they have over our client. We want to provide a solution for people who don't need their data stored in a nuke-proof mountain or in a DOD-level security datacenter. The way we're setup now, the data is strongly encrypted, then replicated to another state, so it would take a pretty impressive disaster to knock us offline for more than a few minutes at a time.

We offer pricing breaks based on prepayment, so it will look like this:
100GB - $19.99 Montly, $17.99/mo Quarterly, $15.99/mo Annually
50GB - $9.99 Montly, $8.99/mo Quarterly, $7.99/mo Annually
5GB - $6.99 Monthly, $5.99/mo Quarterly, $4.99/mo Annually
Once the free 30 day trial period is up, you just have to visit the http://www.backuptotheweb.com/npo pricing page to subscribe (via PayPal, but we also accept POs, checks and money orders)
As far as security, I'm trying to find the best way of explaining our philosophy, so I'll give it a shot. We are very security-conscious, but we don't believe it takes an armed bunker to be secure. Our software encrypts the data before it leaves the site, transfers it to our site with additional encryption, then immediately replicates the data to another state, to ensure that any environmental issues at the main site won't affect the ability of our customers to continue backing up and restoring files.
Looking back to your original question, you would fit into the 50GB level well, at about $95/year. For the three servers, you would have two options; either use the network shares as you outlined, or install the client on all three machines and define separate backup sets (that way one server going down wouldn't stop all the others from backing up).
