A good substitute for the pork is turkey bacon. Fry the turkey bacon, and then sauté the onion and celery in the remaining fat from the fry (still use the butter as well). I add the cut up turkey pieces at step #4.

Can you tell how many cups 2.5 # of potatoes are and also the measurement of the bacon, in case one chooses to use real bacon?
