Great looking recipe. I would suggest just a few substitutions to give it a brighter more authentic taste. Try Black soy sauce. It is less salty and more flavorful. About a T. of fresh ginger added about 30 seconds before adding the stock. Cut out the salt and use more black soy if needed. A substitution of white pepper for the black will give it more heat and bite without the pungency of the black. White pepper was also one of the secrets that the Colonel used for his original KFC recipe. Whatever you do, please cut out the cider and white vinegar and use a good rice vinegar for all of it. I have started using rice vinegar exclusively in all my dishes that call for vinegar. It has a clean crisp taste without assaulting your nose when you breath in the fumes.
