If you want the carrots to be softer, add them at the beginning. I like my carrots a little crunchy. I also like my tomatoes to be somewhat firm... if you want them softer, add them earlier as well.
I used gold potatoes so I left the skin on instead of peeling them.
I used No-Chicken broth to make this vegetarian and I used a little more broth and a little less water.
It's jump-up-and-down delicious and I'm not a big fan of soup.
Your directions on #1 say to add the chunks of carrots and 1 tomato to the soup in the pot and then to add remaining tomato to the soup base in blender. But you don't say how long to cook the soup after adding the carrots or after returning the blender ingredients to the soup in the pot. Can you please clarify those items or modify the recipe to include these directions?
